Dairy has a certain way of just stroking part of your palate in a way that you cant quite capture with anything else. There’s a velvety kind of voluptuous spreading on your tongue that…- can you tell I miss dairy?!
Coconut milk comes pretty close in flavour, but, it tastes like coconut. You can’t really put that in a casserole. I tried. It sucked. Suckyhood In Epic Proportions. err…well, that and the addition of nutritional yeast and ground mustard powder and copious amounts of arrowroot starch. It had a wierd persistently sticky, slimey, gooey consistency and it hung in dangly threads off my spoon and was semi translucent and… looked like it belonged in a kleenex. Note To Self: Disgusting.
So the hunt continued…. And then I found this recipe. And this recipe.

I played around with each of them, and came up with my own version. I found my cream sauce! Its freakin delicious! I kept greedily shovelling spoonful after spoonful into my bowl and slurped away. oh man. Thicky, cheesy, velvety, glorious cream sauce. Sooooooo happy. :)

Gluten Free Dairy Free Cream Sauce
Ingredients
- 8 tbsp olive oil
- 4 tbsp rice flour (make sure it is extra finely ground if possible)
- 4 tbsp chickpea flour (garbanzo or gram flour)
- 2 tsp potato starch
- 1 1/2 cups gluten free organic chicken stock (or vegetable stock)
- 1 cup rice milk
- 1 tsp mustard powder
- 1 1/2 tsp dried oregano
- 1/8 tsp hot pepper flakes
- salt to taste
- generous ground black pepper
Directions
- Mix the dry ingredients together in a bowl, thoroughly
- Heat the olive oil in a deep sauce pan, over medium heat
- Add the flours, stir till thickened ( don’t let it get brown on you or start to burn)
- Add the chicken stock, rice milk while stirring quickly to fully incorporate
- Add seasonings and spices ( you can change them up if you wish)
- Continue stirring until the sauce reaches your preferred consistency
- If its lumpy, a quick pass with a hand blender should fix any problems
- If you want to ‘snob’ it up a bit, add a few tablespoons of white wine or marsala wine.
- Done!
