Hey there Katie!

So glad you’re going to give agar a try- I find it is a huge life saver. I no longer need to use any xanthan gum in my baking (which is wonderful because the stuff is so not good for my gut), and if you are not vegan, you can easily substitute unflavoured gelatin. Its really a terrific egg replacer! (You’ll find its super cheap at your local asian grocer).
