Dairy Free Vegan Cheese Crackers

 

Just a quickie for you… I made a neato snack last night and had to share. I was kinda hankering for something cheesy,  and was trying to figure out how I could best simulate that dairy flavour in a snack… I think I got it! Cheesy doodle chips…. OK, its super easy. Give it a shot. And YES nutritional yeast is good- don’t be all grossed out by the name- you can get it at your grocery or health food store.

Ingredients

  • gluten free tortilla recipe
  • 5-6 tbsp nutritional yeast
  • 5-6 tbsp cashew butter
  • 1/4 cup olive oil
  • smoked paprika, to taste
  • salt, to taste

 Directions

Take 1 recipe of gluten free tortillas. Don’t cook them, just roll them out.  (You might want to put them in the freezer for 10 min on parchment paper so they’re sturdier to use).

Brush a cookie sheet with olive oil. Place the tortillas on top.  Spread on them a layer of cashew butter, and sprinkle on the salt and smoked paprika.  (about 2 tbsp cashew butter per tortilla).  Sprinkle on about 1 tbsp of nutritional yeast on top.  Slice the tortilla in quarters or smaller. 

Roast the tortillas on the cookie sheet at 350 for 10-12 minutes, or until the bottoms are dark golden brown and crunchy.  Let them cool a few minutes and crunch down.  YUM.  This would be so good with a little salsa…

You know, I wonder what these would taste like if I mixed the ingredients into the dough rather than spread them on top… or if I mixed the spread ingredients rather than layering them… bet it would be kinda delicious… I’ll have to try that next time…
