Summer means salad for dinner…. and the variations that you can pull off on a whim are endless… this one is my mom’s, the Queen of Vegetables. Yup. You want vegetables to blow your mind? You call my mama.
Anyhow, she made it, I take no credit… but its yummy and a great lunch. Its fresh, a bit spicy, crunchy, and filling. Hooray for days up at the cottage with the parental units :)

Ingredients
Salad
- 1 carrot, peeled and chopped
- 2 stalks celery chopped
- 1 cup parsley, chopped
- 1 red pepper, diced
- 1 green pepper, diced
- 2 green onions, chopped
- 2 cans tuna packed in water, drained
- 1 can chickpeas
- 1 can mixed bean medley
Dressing (mix together in a jar and shake)
- 1 small garlic glove, grated
- juice of 1 lemon
- juice of 1 lime
- olive oil, salt, pepper to taste
Directions
- Dump the ingredients in a bowl.
- Toss with the dressing.
- Done. :D
