Berries, berries berries galore! I love all the terrific berries coming out this time of year. After the heat today (in O-town it was over 40 with the humidity!), a nice iced tea infused with blackberries and baspberries, and a hint of lime totally hits the spot. (Mental note, Alea, if you think your air conditioner is broken, why not check to see that its actually turned on before sweating through 4 days of insane heat and baking for the farmers market without ventilation? Yah. That would be a Good Idea. ) *sheesh*. lol. ok, I could have totally used a glass of this at 2 am waking up in the heat but aaaaaannyways…
I first came across a version of this recipe from One Ordinary Day, a sweet little blog full of fun recipes and thoughts on life, and sooo many things I want to adapt to allergen free… mmm did you see the frozen hot chocolate? I have ideas for making that sucker dairy free I tell you! :)
Anyhow, on to the Blackberry Raspberry Iced Tea! A fun summer refresher…

Blackberry Raspberry Iced Tea
Ingredients
- 3 1/2 pint containers of blackberries (about 4 cups) (If you don’t have blackberries, you can always use just the raspberries below and reduce the 1 1/2 cups water by half)
- 4 cups raspberries
- 1/2 vanilla bean, split and scraped (optional)
- 1 1/2 cups water (reduce by half if not using blackberries)
- 1 cup honey (Vegan: 1 cup agave nectar)
- 4 black tea bags
- 6 cups water
- 3 limes or 2 lemons
Directions
- Boil the 6 cups of water, and add the 4 tea bags. Let them infuse for at least 15 min while you work on the berries. (you can infuse longer or less time, but do make the tea stronger than you usually drink it- it will be diluted by the berries).
- Put the berries, vanilla bean and seeds, 1 1/2 cups water and 1 cup honey into a pot.
- Simmer over medium heat for 20 min to make the syrup.
- Strain the berry seeds and vanilla pod out with a fine mesh sieve, and add the syrup to the tea.
- Chill. Add the juice of 3 limes or 2 lemons or wait to add just a splash of juice per glass serving.
Note: You may wish to water down the iced tea if you find it thick with the berries. Personally, I loooove it!

Visiting from Ricki’s Wellness Weekend. That iced tea really looks so beautiful and sounds so refreshing–wow! I’m all for cooling, refreshing drinks with the 100+ F temps here.
